Horseradish Mashed Potatoes

Ingredients
3 lbs. Yukon gold potatoes
1-2 Tbsp Kosher salt
1/2 cup Butter, unsalted
1/2 cup Heavy cream
1 cup Sour cream
3 Tbsp Tulkoff Extra Hot Horseradish
Salt and pepper, to taste
Directions
Peel and dice potatoes, making sure all are relatively the same size. Place in a large saucepan with enough cold water to cover by 2″ and add kosher salt. Bring to a boil, cooking for approximately 20 minutes, or until tender.
Meanwhile in a small saucepan, heat butter and cream over low heat until butter is melted.
Drain cooked potatoes and put through a ricer, or use an electric mixer to begin to break up potatoes.
Using an electric mixer, slowly mix the cream mixture into potatoes until smooth. Add in sour cream and Horseradish, continuing to slowly blend until creamy. Season with additional salt and pepper.
