Mozzarella Sticks with Homemade Marinara

Ingredients
1 cup All-purpose flour
2 tsp Kosher salt, divided use
¾ tsp Dried parsley flakes
½ tsp Garlic powder
½ tsp Onion powder
½ tsp Italian seasoning
4 Eggs
¼ cup Milk
2 cup Plain panko crumbs
2 balls Fresh mozzarella, sliced into logs
Directions
Using a fork, toss together flour, 1 teaspoon of salt, garlic powder, onion powder and Italian seasoning in a shallow dish. In another shallow dish, gently whisk together eggs and milk. In another third dish, mix together panko and remaining salt.
Line a cookie sheet with parchment paper or a silpat and set aside.
Dredge cheese in flour mixture and shake off excess, then dip into the egg mixture and then panko. Repeat the process for all pieces of cheese and lay on the prepared cookie sheet. Place in the freezer for at least 8 hours, but preferably 24.
Pour 1/2 inch of oil into a heavy bottomed and high-sided pan over medium-high heat. Use tongs to lower a few slices of cheese into the pan frying on each side for two minutes. Use a slotted spoon or spatula to remove the mozzarella and transfer to a paper towel lined plate.
