Pesto Chicken Caprese Sandwich

Adding Tulkoff’s Basil Pesto Genovese to this nutritious and flavorful take on Italy’s Caprese Salad makes this chicken Caprese sandwich recipe a winner.
2 Chicken breasts, boneless & skinless
4 Tbsp Olive oil
Salt and pepper, to taste
2 Ciabatta rolls, sliced in half
½ cup Arugula
4 slices Fresh mozzarella cheese, sliced
1 Tomato, sliced
4 Tbsp Tulkoff Pesto Genovese
Season chicken with salt and pepper. Grill until cooked through. Slice into strips and set aside.
Toast the sliced ciabatta. Toss arugula with olive oil, salt and pepper. Divide arugula between 2 bottom slices of ciabatta, place 2 rounds of fresh mozzarella and 2 tomato slices as well as chicken strips on each. Finish by drizzling Tulkoff Pesto Genovese over chicken and placing remaining ciabatta slices on top.
Serve alongside your favorite side dish!
