Ingredients
1 1/2 cup All-purpose flour, cold
2 tsp Baking powder
4 oz Tulkoff’s Scampi Butter, pre-measured into small cubes and frozen
3/4 cup Whole milk, cold
Directions
Preheat oven to 425°F. Line a baking sheet with parchment paper, a silicone mat, or grease.
In a large bowl, whisk together the flour and baking powder until well combined. Add in the Scampi Butter and toss to cover with flour. Then, using a pastry blender, cut the butter into the flour until it resembles a course meal. Do this stage quickly so that the flour does not produce a lot of gluten. Alternatively, you can blend the flour mixture and the butter in a food processor until you have pea-sized pieces. If you use the food processor, transfer the mixture to a large bowl at this stage.
Add in the milk and stir until the mixture just comes together into a shaggy, wet dough.
Scoop out the dough with a small ice cream scoop for small biscuits, or with a 1/4 cup measuring scoop for larger biscuits. Shape into rounded mounds and place on the baking sheet.
Bake for 15 minutes, or until the biscuit begins to brown.
