Ingredients
3 1/2 oz Tulkoff Scampi Butter, or to taste
2 1/2 cups water
2 cups your favorite instant mashed potatoes
2 egg yolks
1 egg
1 tsp black pepper
2 Tbsp green onions, chopped
1 Tbsp parsley flakes
Panko bread crumbs
Directions
Heat the water and the scampi butter in a medium sized saucepan. Once hot, remove from the heat and stir in the instant mashed potatoes, mixing well. The mashed potatoes should be moist enough to hold their shape. If needed, add more hot water.
To the mashed potatoes, add the egg yolks, egg, parsley, green onions, and black pepper. Shape the mixture into 15 small puck shapes (about a 1/4 cup in size each) and roll in the bread crumbs.
In a large, deep skillet, heat a half inch of vegetable oil over medium high heat. Place the croquettes into the skillet, watching carefully and turning every couple minutes until golden brown.
Drain on a paper towel lined plate and serve.
