Spicy Tuna Hand Rolls

Feed your sushi craving with these BOLD and easy to make hand rolls!
2 cups Short-grain Japanese rice
2 cups Water
1/4 cup Rice vinegar
1/4 cup Sugar
2 Tbsp Salt
1 Tbsp Lemon juice
3 tsp Sriracha
1 Tbsp Soy Sauce
1 tsp Sesame Oil
6 sheets Nori, cut in half
3/4 lb Ahi Tuna, raw or seared
1 Cucumber, thinly sliced
1 Carrot, thinly sliced
1 Avocado, thinly sliced
In a small saucepan, combine the rice with water and bring to a boil. Cover and reduce to a moderate heat for 10 minutes. Turn off heat and let stand for 10 minutes.
In a large bowl, whisk rice vinegar, sugar and salt. Stir in rice and cool to room temperature.
In a separate medium bowl, whisk Extra Bold Horseradish Sauce, lemon juice, Sriracha, soy sauce and sesame oil.
Place a sheet of nori on a flat surface and add some rice to one end of sheet. Top with one slice of ahi tuna, cucumbers, carrots and avocado. Add a spoonful of sauce over top.
Starting from the bottom left corner, roll into a cone shape and moisten the edge to seal shut.
Serve with remaining Horseradish Sauce for dipping and soy sauce.
