Ingredients
2 cups Water
1 cup White or brown rice
1/2 teaspoon salt
1 tsp Olive oil
8 uncooked Large shrimp, peeled, deveined
2 Tbsp Sesame seeds, toasted
1 Avocado, sliced
1/2 cup Bean sprouts
1/2 cup Shelled edamame
1 Scallions, chopped
Directions
Bring water to a boil. Add rice and salt and stir. Cover the pot and turn the heat down to low. Cook for 18 minutes or until firm but tender.
Meanwhile, heat a skillet on medium-high heat with olive oil and add shrimp. Cook until shrimp are pink on the outside and opaque in the center.
Toast sesame seeds in a dry skillet over medium heat until lightly browned.
Place cooked rice to bottom of bowl, adding cooked shrimp, toasted sesame seeds, avocado, bean sprouts, edamame, and scallions. Top with Spicy Kimchi Aioli.
