Ditch the ordinary eggs and start your day with these flavorful eggs scrambled with onions, peppers, Spicy Chipotle Chili Aioli, tortilla chips and cheese.

Ingredients

8 Eggs

1/4 cup Whole milk

1/2 tsp Cumin

Salt and pepper, to taste

1 Tbsp Olive oil

1 small Onion, diced

1 Jalapeño, diced

3 cloves Garlic, minced

1/2 cup Tulkoff Spicy Chipotle Chili Aioli

2 large handfuls Tortilla chips, roughly crumbled

2/3 cup Pepperjack cheese

Directions

In a large bowl whisk together eggs, milk, cumin, salt and pepper. Set aside.

Heat oil over medium-high heat in a large sauté pan. Add onion and jalapeño and sauté stirring occasionally, until the onion is soft and translucent, about 5 minutes. Add garlic and sauté until fragrant.

Add the egg mixture and reduce heat to medium. Cook for 4 minutes, gently stirring. Before eggs are fully cooked, gently stir in Chipotle Aioli, tortilla chips and cheese. Cook for 2 more minutes, stirring occasionally or until eggs a cooked to your liking. Season with additional salt and pepper.

Sprinkle with additional cheese if desired and serve.
