Ingredients

1 spring Thyme

1 Tbsp Butter

1 Onion, halved and thinly sliced lengthwise

12 oz Ground beef

Salt and pepper, to taste

1 Tbsp All-purpose flour

8 oz Beef broth

1 tsp Olive oil

3 slices Gruyère cheese

Ciabatta bread, cut into squares and halved

4 Tbsp Tulkoff Garlic Aioli

3 oz Arugula

Directions

Strip thyme leaves, discarding stems. Heat butter in a medium saute pan over medium-high heat. When butter is foamy reduce heat to medium, add onions and thyme, stirring occasionally until light brown and softened, about 15 minutes.

While onions cook, form beef into 2 patties, about 1/2 inch thick. Season with salt and pepper. Using your thumb, make a dimple in the center of each (keeps patties from plumping too much during cooking).

Add flour to onions and stir until flour is no longer visible, about 2-3 minutes. Add beef broth and increase heat, bringing to a boil. Reduce to medium and simmer until sauce is thickened and reduced. Remove pan from heat and season with salt and pepper.

Heat 1 tsp olive oil in a pan over medium heat. Cook burgers for about 4 minutes per side, or until they have reached desired doneness. Spoon onion mixture over burgers and top with Gruyère. Cover pan and cook until cheese is melted.

Toast ciabatta halves. Top ciabatta halves with burgers, spread on Garlic Aioli and top with arugula and ciabatta tops. Serve alongside any remaining onion mixture.
