Chipotle Enchiladas

Chipotle makes everything better right? RIGHT!

2 Tbsp Vegetable oil

1.5 lbs Boneless skinless chicken breasts, diced into small 1/2-inch pieces

1 medium Onion, diced

Salt and pepper, to taste

3 Tbsp Tulkoff Chipotle Chili Aioli

2 (8-oz) cans Tomato sauce

1 can Black beans, rinsed and drained

2 cups Mexican-blend shredded cheese, divided use

8 Flour tortillas

1 (4-oz) can Sliced olives, drained

1/4 cup Fresh cilantro, chopped


Preheat oven to 400º F. In large skillet, heat oil over medium-high heat. Cook chicken, onion, salt and pepper in a large skillet until chicken is cooked through. Stir in Chipotle Chili Aioli and tomato sauce. Remove from heat and set aside.

In a line down the middle of each tortilla add meat sauce and beans, then sprinkle with 1/3 cup cheese. Roll up the tortillas and place in a greased 9 x 13-inch baking dish. Repeat with the remaining ingredients. Pour remaining meat sauce over the finished tortillas and sprinkle olives and cheese on top. 

Bake uncovered for 20 minutes. Remove from oven and garnish with cilantro. Serve with sour cream and guacamole if desired.
