Chipotle Esquites

This off-the-cob Mexican street corn dip is loaded with smokey, Southwest flavor from our Spicy Chipotle Chili Aioli.

Ingredients

5-6 ears of Corn, shucked

1/3 cup Tulkoff Spicy Chipotle Chili Aioli, per taste

1/3 cup Cotija cheese, crumbled (queso fresco will also work if cotija not available)

3 Tbsp Cilantro, chopped

Zest and juice of 1 lime

Salt and pepper, to taste

1 bag Tortilla chips

Directions

Place corn in a large pot of water and bring to a boil. Cook, stirring occasionally to make sure the corn is submerged, for 3 to 5 minutes, or until the corn is tender.

Strain corn and allow to cool. Cut kernels off cob.

In a large mixing bowl, add corn, Chipotle Aioli, cotija, cilantro, zest and juice of lime and season with salt and pepper. Stir to combine.

Serve alongside tortilla chips for dipping.
