Chipotle Quesadilla

Spicy Chipotle Chili Aioli takes this basic cheese and tomato quesadilla recipe to a new level of flavor.

Ingredients

1 cup Cheddar cheese, shredded

1 cup Pepper jack cheese, shredded

1 cup Monterey jack cheese, shredded

4 Tbsp Butter

4 8-inch Flour tortillas

1/2 cup Tulkoff Spicy Chipotle Chili Aioli, divided use

1 Tomato, diced

Directions

In a bowl, toss three cheeses together and set aside.

Heat 1 tablespoon of the butter in large skillet over medium heat.

On 2 of the tortillas, spread about 2 Tbsp of Chipotle Aioli on each. Place a single tortilla in the skillet, chipotle side up and sprinkle cheese over tortilla along with tomatoes. Top with another tortilla and cook until golden brown, about 2-3 minutes. Flip quesadilla to other side and cook additional 2-3 minutes. Repeat with the remaining ingredients.

Slice each quesadilla into wedges and serve alongside extra Chipotle Chili Aioli for dipping.
