Chorizo Tacos

Pineapple adds a hint of sweetness to these slightly spicy, slightly smokey chorizo tacos featuring Spicy Chipotle Chili Aioli.

Ingredients

1 Tbsp Vegetable oil

1/2 Onion, chopped

1 lb Chorizo, removed from casing

2/3 cup Pineapple, diced

¼ cup Tulkoff Spicy Chipotle Chili Aioli

10 6-inch Corn tortillas

Fresh Cilantro, roughly chopped

1 Lime, cut into wedges (optional)

Directions

Heat oil in a large skillet over medium-high heat. Add the onion and sauté for a few minutes until slightly softened. Add chorizo and cook until brown and the fat is rendered, about 5 minutes. Drain some of the grease and add pineapple, cooking until warmed through.

Remove from heat and stir in Chipotle Aioli.

Warm tortillas in microwave or oven. Divide the chorizo mixture among the warm tortillas and top with cilantro. Serve alongside a lime wedge.
