Ingredients
3 large Beets
Olive oil, enough to drizzle over the beets
1 tsp Thyme, dried
Salt and freshly ground Pepper
1/2 tsp Dijon mustard
1/4 cup Apple-cider vinegar
1/2 cup Olive oil
4 Tbsp Tulkoff Red Beet Horseradish
Salt and Pepper, to taste
1 Green apple, cubed
Directions
Preheat the oven to 400°F.
Cut the tops and roots off of the beets and peel them completely. Cut into 1 inch cubes and place them on a baking sheet. Combine with the olive oil, thyme, salt and pepper. Roast in oven for approximately 40 minutes, or until the beets are tender. During roasting, turn them a few times to ensure even roasting. Remove from the oven and let cool.
In a large mixing bowl, mix together the mustard and vinegar. Slowly pour in olive oil, whisking vigorously until well combined. Gently whisk in Red Beet Horseradish, salt and pepper. Add beets and apples to dressing and toss until combined.
Serve and enjoy!
