Pork Loin with Creamy Pesto Sauce

Ingredients
1 lb Pork tenderloin
Salt and pepper, to taste
½ cup All-purpose flour
2 Tbsp Canola or vegetable oil
3 Tbsp Butter
1 Shallot, diced
1 clove Garlic, minced
¼ cup Red wine
1 cup Heavy cream
¼ cup Tulkoff Pesto Genovese
Directions
Cut pork into 1 ½” thick slices and season with salt and pepper. Place flour in a shallow dish; dredge pork in flour.
Heat a large nonstick skillet over medium-high heat and add oil. Cook pork 5 minutes on one side, or until golden. Turn pork over; cook 3 minutes or until desired degree of doneness and set aside.
Melt butter in skillet on medium heat. Add shallots and garlic, sautéing until shallots soften. Add the red wine and cook down for about 2-3 minutes. Remove from heat, stir in heavy cream and Pesto Genovese.
Pour sauce over pork and serve with your favorite side dish.
