Spicy Breakfast Hash

Start your morning off right with this hearty (and spicy) breakfast!

3-4 Russet potatoes

½ lb Hot Italian sausage

½ Onion, chopped

Salt and pepper, to taste

¼ cup Cheddar cheese, shredded

1 Tbsp Butter

2 Eggs

Tulkoff Jalapeño Aioli


Pierce potatoes a few times with a fork, put in the microwave and cook on high until cooked through, about 5-7 minutes. Cut into cubes and set aside.

Meanwhile, place sausage in a cast iron skillet and place over medium heat. Cook, breaking up sausage until it starts to crisp on all sides and fat has rendered. Add the onions and cook for a few minutes. Add the diced potatoes and cook until golden brown. Season with salt and pepper. Sprinkle with cheese.

In a separate pan, melt the butter over medium heat and crack in the eggs, season with salt and pepper. Cook until the whites have set, 3 to 4 minutes.

Serve the hash with a fried egg on top and drizzle with Jalapeño Aioli.
