Ingredients
1 medium Cauliflower
3 Tbsp Sesame oil, divided use
1 Tbsp Tulkoff Chopped Roasted Garlic
1 cup Frozen mixed peas and carrots, thawed
1 cup Frozen corn kernels, thawed
2 Eggs
Salt and pepper, per taste
3 Tbsp Soy sauce
Directions
Cut the cauliflower into florets. Pulse in a food processor until it breaks down into rice sized pieces.
Heat 2 Tbsp of sesame oil in skillet or wok. Add the Chopped Roasted Garlic and stir for 30 seconds or until fragrant. Add cauliflower rice, peas, carrots and corn. Cook for 5 minutes.
Push veggies to the side of pan/wok and add remaining sesame oil. Break the eggs into the oil and season with a salt and pepper. Use a spatula to scramble the egg, breaking it up into small bits.
Toss the egg and the rice together, adding soy sauce.
Serve with additional soy sauce.
