Chipotle Chicken Quesadilla

This loaded quesadilla wouldn’t be complete without our Spicy Chipotle Aioli!
3 Tbsp Olive oil
1 lg Red onion, chopped
6 Flour tortillas, 10 inches in diameter
3/4 cup Tulkoff Chipotle Chili Aioli
3 Scallions, thinly sliced
4 Vine-ripened tomatoes, diced
2 1/2 cups Chicken, shredded
1 bunch Fresh Cilantro, chopped
4 cups Sharp cheddar cheese, shredded
Sour cream, optional
Lime wedges, optional
In a large pan, heat the olive oil over medium heat. Add red onion and sauté until soft, or for about 5 minutes.
Heat another pan over medium heat and spray lightly with non-stick cooking spray. Lay a tortilla in the pan and heat until hot to the touch, but not crisp. Flip tortilla over and spread Chipotle Chili Aioli over half of the tortilla, then sprinkle with red onions, scallions, tomatoes, chicken, cilantro and 2/3 cup of cheese. Fold the tortilla over to cover the filling and form a half moon shape. Cook until the tortilla is crisp and golden brown, or a few minutes per side. Repeat with remaining tortillas.
Cut into wedges and serve with sour cream and lime wedges, if desired.
